Halloween is just a couple of days away, and while your kids may be excited to fill up their candy bucket while trick or treating, you are most likely looking for ways to limit their sugar intake. Make this simple Halloween chicken soup dinner recipe before hitting the streets to help limit how much candy your kids eat.
Witches’ Brew Chicken Soup
You will need:
- 1 tablespoon butter
- 4 skinned and boned chicken breast halves, chopped
- 1 large onion, chopped
- 3 carrots, chopped
- 2 garlic cloves, minced
- 2 cans low sodium chicken broth
- 1 tablespoon chicken bouillon granules
- 1 teaspoon ground cumin
- ¼ teaspoon ground red pepper
- 3 cans Northern beans, rinsed, drained, and divided
- 1 can chopped green chilies
- 2 tablespoons all purpose flour
- ½ cup milk
- ¼ cup chopped cilantro
- Toppings: sour cream, sliced green onions, bacon, and shredded cheddar cheese
Then you will need to:
- Melt the butter in a large Dutch oven over medium high heat. Add the chicken, onion, carrots, and garlic and sauté for 10 minutes. Stir in the broth, bouillon, cumin, and red pepper.
- Bring to a boil, reduce the heat and simmer, stirring occasionally for 20 minutes. Stir in the 2 cans of beans and chilies.
- Mash the remaining can of beans in a small bowl. Whisk together the flour and milk and stir in the beans. Gradually add the bean mixture into the soup mixture, stirring constantly. Cook for 10 minutes, or until the soup has thickened. Remove from the heat, stir in cilantro, and serve with your favorite toppings.
