Summer Taco Recipe
Tacos are one of the easiest meals to make for the whole family. With tons of options for the filling, tacos are a great option for even the pickiest eater. Keep this tasty, spicy sweet potato and black bean tacos with lime cilantro yogurt recipe in mind to enjoy any day this week.
Ingredients:
- 1 ½ pounds sweet potato, cubed
- 4 tablespoons olive oil, divided
- 1 tablespoon taco seasoning
- Pepper
- Salt
- 1 finely chopped small onion
- 2 cloves garlic, finely chopped
- 1 can rinsed and drained black beans
- 1 lime
- ½ cup plain yogurt
- 2 tablespoons cilantro, plus more for garnish
- 4 tortillas
- Cabbage for garnish
- Lettuce for garnish
- Radish for garnish
- Jicama for garnish
Directions:
- Preheat your oven to 425 degrees. Line a baking sheet with aluminum foil. Toss the sweet potato cubes in a bowl with 3 tablespoons of olive oil, salt, pepper, and taco spices. Pour onto the baking sheet in a single layer and cook for 15 to 20 minutes, or until tender, stirring halfway through.
- Heat the remaining olive oil over medium high heat in a sauté pan. When the oil is hot, add the onion and cook for 5 to 6 minutes until they are translucent and starting to brown. In the last 30 seconds of the cooking process, add the garlic. Reduce the heat to medium low, add the black beans, 2 pinches of salt, and the juice from half the lime. Heat until completely warmed through.
- To make the lime cilantro yogurt, mix the rest of the lime juice, yogurt, and cilantro in a small bowl.
- Warm the tortillas by heating on a skillet. Layer the sweet potatoes and beans on the tortilla with the garnishes of your choice. Top with the lime cilantro yogurt, and enjoy!
